Aspargus Soup

Try our recipe for a nicely warming asparagus soup.

  • Thaw one pound of white asparagus, cut it into 1-inch pieces, and put these in a soup bowl.
  • Bring 2 pts of good broth to a boil.
  • Stir together 1 T butter and 1 ½ T flour.
  • Pat it into the broth and let simmer for a while.
  • Take the pan off the heat.
  • Mix together 2 egg yolks with ½ Cup of cream.
  • Pour the mixture into the broth stirring it vigorously.
  • Let simmer for a few minutes, though it must not boil.
  • Finish it off with a touch of luxury, adding peeled shrimps and parsley.
